Chefs :: Chef job description
Head chef is often used to designate someone with the same duties as an Executive Chef or Chef de Cuisine, but there is usually someone in charge of them, possibly making the larger executive decisions such as direction of menu, final authority in staff management decisions, etc. The term Head Chef is often used in smaller restaurants with a hand full of staff where the term Executive Chef is over the top!
In larger restaurants, the Head Chef generally does more supervision than cooking. Senior chefs have to attend staff meetings, where they discuss problems related to their areas, and receive or issue instructions to other managerial staff. In small restaurants, the head chef may prepare food, assisted by other cooks or apprentices. As well as expert cooking knowledge, chefs involved in supervision need a general knowledge of the skills and activities of all their workers.
